Ingredients
4 eggs, separated
8 large potatoes peeled grated and drained (about 4 pounds)
1 large onion, grated
salt pepper to taste
pinch of baking powder
1 cup vegetable oil
Preparation
Beat egg whites until still and dry. In a large bowl mix potatoes, onions egg yolks salt and pepper and baking powder.
Add egg whites, fold in and mix well.
Heat oil in a large frying pan and drop latkes from a large cooking spoon into the hot oil. Fry golden brown on both sides, drain on paper towel.
Can be sereved with meats or with sugar, applesauce or sour cream.
