Ingredients
12 slices light rye bread
1 lb. smoked kielbasa
2 onions
2 celery ribs
1 large garlic clove
1 stick unsalted butter
2 granny smith apples
1 cup flat parsley leaves
2 cups chicken broth
Preparation
Cut bread into 1/2" cubes and toast in one layer until golden (approx. 10-15 minutes).
Quarter kielbasa lengthwise and cut crosswise into 1/4" pieces. Chop onions and celery. Mince garlic. Brown kielbasa over medium heat. Transfer to paper towels using a slotted spoon.
To skillet, add 6 tablespoons of butter and cook onions, celery and garlic stirring occasionally until celery is crisp tender. Finely chop apples and stir into mixture. Cook until apple is softened.
Mince parsley. In large bowl, toss bread, kielbasa, veggie mix, parsley, broth and salt and pepper to taste. Transfer to a buttered baking dish. Dot stuffing with remaining butter and back uncovered until golden at 375 degrees for 30 minutes.
