Ingredients
1 lb. ground sirloin
1 jalapeno (chopped with/without the seeds)
1 small red onion (chopped)
2 cloves of garlic (chopped)
2 T. chili powder
2 t. cumin
3 T. olive oil
2 15.5 oz cans of red kindney beans
2 15.5 oz cans of chili beans with spices
2 15.5 oz cans of chili style tomatoes with green chilis
salt and pepper
4 C. of monterrey jack cheese
sour cream (optional)
Preparation
Heat the olive oil in a deep pot over medium heat. Cook the ground sirloin til lightly browned (8-9 mins). Add the onion, garlic, chili powder and cumin and cook for another 3 minutes. Add the beans and tomatoes with their liquid and bring to a simmer. Cook for about 40 minutes stirring throughout. Add the monterrey jack cheese and serve with a dollop of sour cream. You can even add a few tortilla chips.
