Ingredients
For the spice rub
● 2 cloves garlic, crushed in a press
● 3 teasp paprika
● 1½ teasp ground coriander
For cooking
● 2lb beef cubes
● 1 large onion, chopped
● 3 large cloves garlic, chopped
● 2 tsp paprika
● 2 tsp ground coriander
● 1 - 28 oz can diced tomatoes in tomato juice
● 9 oz red wine
● Beef stock (if needed)
● 9 oz chopped, pitted prunes
For topping
● 1 pkg. walnut pieces, tossed in a non-stick pan until they smell “toasty”
● Sour cream
Preparation
Combine the garlic, paprika and coriander and beef. Cover and refrigerate overnight.
Add beef and all other ingredients except walnuts and sour cream in a crockpot. Set on low and then cook for 8 - 10 hours. If mixture gets dry, add beef stock.
Server with walnuts and sour cream.
