Ingredients
3 T. butter
1 c. sugar
1/4 c. flour
3 eggs, separated
2 tsp. grated key lime zest
1/4 c. freshly squeezed key lime juice
1-1/2 c. milk
1/2 tsp. grated nutmeg
1/4 tsp. salt
Preparation
In a large bowl, cream together butter, 1/2 c. of the sugar and flour. Add egg yolks and beat well. Stir in zest, juice, milk and nutmeg and set aside. Add salt to egg whites and beat until stiff. Gradually beat in remaining sugar. Fold gently into butter mixture. Pour batter into a 1-1/2 qt. buttered baking dish and set dish in a larger shallow pan with 1 inch of boiling water. Bake at 325 degrees for 1 hour and cool before serving.
