Ingredients

1 cup all purpose flour

3/4 cup self-rising flour

1 stick butter room temperature

1.25 cups sugar

2 large eggs

2.5 tablespoons lime juice

1 tablespoon lime zest

1/4 teaspoon neon green food coloring

3/4 cup buttermilk

Frosting:

1 eight ounce package cream cheese, room temperature

1.5 cups powdered sugar

1 stick butter

1 tablespoon lime zest

1/2 teaspoon vanilla extract

Preparation

preheat oven to 350

  1. whisk two flours together
  2. beat butter in a large bowl until smooth, add sugar to blend
  3. beat in eggs 1 at a time, then add next three ingredients (may look curdled)
  4. alternate flour and buttermilk until combined
  5. bake 20-25 minutes

Frosting: blend then spread over cupcakes
