Ingredients
5 ounces vegetable oil
1 large carrot, diced
1 large onion, diced
1/2 bunch large celery, diced
1 pound pulled smoked chicken
1 pound diced stew meat
1/2 pound chunks of ham
2 small cans tomato paste
24 ounces V8 juice
32 ounces beef stock
32 ounces chicken stock
24 ounces blended frozen mixed vegetables
16 ounces frozen okra
4 ounces Worcestershire sauce 3 ounces hot sauce
Preparation
- In a large 14-quart stock pot, heat vegetable oil on medium to high heat.
- Add celery, onions and carrots. Cook till onions become translucent.
- Add smoked chicken, stew meat, and chunks of ham to vegetables and sauté for 5-6 minutes.
- Add the rest of the ingredients and cook on low for about 2 hours.
