Ingredients

1 - 1 lb bag of small carrots or 6 large peeled carrots

1/4 c. virgin olive oil

1 TB dijon mustard

3 garlic cloves1 TBS brown sugar (light or dark)

Preparation

Peel & dice carrots (if using whole large carrots). Steam the carrots for 10-15 minutes (test with a fork). Mix the next 3 ingredients together & whip into a glaze (sauce) while carrots are steaming. Drain carrots & mix thoroughly with glaze.

Can be made 24 hours in advance & reheated in microwave. Serve warm or cold.
