Ingredients
2 1/2 cups unbleached bread flour
1 tsp salt
1 T sugar
12 T cold unsalted butter (1 1/2 sticks), diced
1/2 C cold lard (or, if you must, shortening)cut into quarters
1/4 C cold vodka
1/4 C cold water
Preparation
Beat 1 1/2 C flour , salt, and sugar in food processor for a couple seconds until mixed. Add butter and lard and process until clumpy (cottage cheese like). Scrape down sides of bowl, and add remaining 1C flour and pulse until dough is broken up into crumbs. Emtpy to another medium bowl and beat in water/vodka mix untill dough sticks together and is tacky. Divide into two parts, wrap w/ plastic wrap, and refrigerate for 1 hour. Roll out one ball on dusted rolling surface, place into pie plate and fill with Kelly’s Pumpkin Pie filling.
