Ingredients
16 oz. cranberries
1 C sugar or sucanat
1 C freshly squeezed orange juice
2 T orange zest (reserve half for finishing)
1/4 C Cointreau
2 cinnamom sticks
1/2 t ground cinnamom
5 clove)s
3/4 C lightly toasted walnuts (optional
Preparation
Combine all ingredients in a saucepot, cook until cranberries pop (anywhere from 10-30 minutes) over medium heat. Skim foam off the top with metal spoon. Taste and adjust to your liking (sweeter, more orange flavor, etc.) Cool to room temperature, then refrigerate. Add remaining orange zest and, if desired, walnuts just prior to serving. Serve cool or at room temperature.
