Ingredients
3/4 c. Snap peas
small can of mandarin oranges
4 c. good lettuce (ie romaine)
1 1/2 c. cooked brown rice
1 c. seedless red grapes
2 scallions chopped
1/2 package of bacon (turkey or pork) cut into small pieces
1/4 c. seasoned rice vinegar
1/2 tbsp dijon mustard
1/4 c/ olive oil
1/8 c sesame oil
1 1/4 tsp soy sauce
3 scallions chopped
1/2 tsp red pepper flakes
1/4 tsp fresh ginger minced
1/4 tsp fresh garlic minced
black pepper to taste
Preparation
Blanch snap peas. Mound the rice in the middle of large plater. Then place all the other ingredients around the rice.
To make the dressing: Whisk vinegar and mustard in a medium bowl. Gradually whisk in both oils, then soy sauce. Mix in green onions and crushed red pepper. Add garlic and ginger. Season with black pepper and salt.
Pour over top of salad and mix all together and serve.
