Ingredients

2 cans black beans

1 can shoe peg corn 1 can navy beans

1 red bell pepper, chopped

1 yellow bell pepper, chopped

3 green onions (scallions), chopped

Fresh cilantro, chopped

2 or 3 limes, for juice

2/3 cup apple cider vinegar (do not substitute)

2/3 cup light olive oil (not evoo)

1/4 cup sugar

2 garlic cloves, minced

1 large bag tortilla chips (rounded scoop shaped)

Preparation

Mix together vinegar, oil, sugar, lime, & garlic. Drain and rinse beans & corn; add to mixture. Add chopped veggies and cilantro and mix well.

Let sit overnight; liquid may gel up. Stir & drain liquid before serving. Reserve liquid in case you don’t eat all of it. Also tastes good when you add chopped tomatoes the day of serving.

Serve with scoop shaped tortilla chips.
