Ingredients

1/2 cup olive oil

1/2 of a medium onion,finely chopped

3 cloves chopped or pressed garlic

1 t. oregano (dried)

1 t. basil (dried)

3 bay leaves

4 cups tomato sauce

10 cups water

1 lb. white kidney beans, drained (1 large can)

1 large can ceci beans, drained

3/4 lb. dittalini pasta

1 T. parsley flakes (or 3/4 cup chopped fresh)

salt & pepper to taste

parmesan cheese

Preparation

Heat olive oil and add chopped onion, garlic, oregano, basil, & bay leaves. Saute 10-15 minutes over low-medium heat. Add tomato sauce; heat through. Add 10 cups of water and cover partially. Cook over medium heat 20 minutes. Add beans with salt & pepper to taste. Reduce heat and simmer 5 minutes. Add pasta and simmer 10 minutes. Stir in parsley. Thin with more water, if necessary. Sprinkle with grated parmesan cheese when serving.
