Ingredients

250g soft butter

3/4 cup caster sugar

2 cups plain flour

1/4 cup cornflour

1/4 cup rice flour

1/4 cup almond meal

2 tsp vanilla essence

Preparation

Preheat oven to 160oc. Line a 28x18cm tin with baking paper. Beat butter and sugar until light & fluffy, add vanilla. sift flours and add to the butter mixture with the almond meal. Press together to form a soft dough.Turn onto a lightly floured surface and knead to smooth. Press into prepared tray and score into fingers & pierce with a folk, sprinkle with extra sugar & bake until golden brown (35-40mins) You can also make into little cookies & then dip into chocolate.
