Ingredients
3 T olive oil
8 oz angel hair, broken in half (or use Fideo)
14 oz can diced tomatoes (don’t drain)
1 c tomato juice
1 c water
4 lg garlic cloves, sliced
1 t oregano
Preparation
Heat oil in heavy skillet over hight heat. Add pasta and saute until brown (about 3-4 minutes), stirring or tossing often. Add tomatoes with their liquid, tomato juice, water, garlic and oregano. Cover and simmer until pasta is tender, stirring occasionally, about 16 minutes. Transfer to bowl. Garnish.
Can put cut-up broccoli or cauliflower in skillet to steam while pasta simmers. Can also add chicken or Italian sausage - just saute first, separately, then throw in at the end.
