Ingredients

1lb penne pasta

1 jar Newman’s Own Alfredo (any brand will work really but I like Newmans Own the best)

1/2 jar milk

1 package sliced baby bella mushrooms (or you could buy a pound or so of bulk mushrooms and slice them yourself, cremini also work really well)

1 large tomato chopped

2 cups fresh spinach

1/2 cup chopped fresh spinach

3 cloves minced fresh garlic

1 scallion finely chopped

2 Tbs olive oil

Fresh grated parmesian cheese

Preparation

Cook pasta according to directions on box. While water is boiling heat olive oil in large pan over medium high heat. Add garlic and scallion and saute for a minute or so. Add mushrooms and reduce heat to medium low, stir occasionally. Add alfredo and milk to a small sauce pan and heat over medium low, stir occasionally. When mushrooms are soft add the spinach and reduce heat to low (reserve the 1/2 cup chopped spinach for later) stir occasionally (yeah, you pretty much stir everything in this recipe occasionally… have fun with it… maybe even do a little dance as you stir) When pasta is finished cooking, strain and return to pot. Add all but a little bit of the sauce to the pasta in pot. Divide pasta among plates. Top with sauteed mushroom spinach mix (and meat if you chose to add some). Top that with chopped tomato. Top that with chopped fresh spinach. Spoon a little reserved sauce over all that and top it all off with fresh grated parmesian. Boom. Win.
