Ingredients

Meatloaf

1 1/2 lbs. lean ground beef

1/2 lb ground pork

1 medium onion, small dice

1/2 cup grated pecorino romano cheese

1/2 cup toasted breadcrumbs (from day old or stale loaf bread)

1 medium egg

1/4 cup milk

1 tsp. salt

1 tsp. pepper

Topping

1 cup tomato catsup

1/2 cup tightly packed brown suger

1/4 cup honey or spicy mustard

Preparation

Mix all loaf ingredients together and place in one large loaf pan or a couple of small loaf pans. Mix together all topping ingredients and pour on top of meatloaf. Spread out evenly. Place loaf/loaves in a 400 degree oven for one hour. Make sure loaf/loaves have a sheet pan underneath each for any spillover.
