Ingredients
1 Tblsp. Minced Garlic
1 ½ tsp ground cumin
¼ tsp salt
1/8 tsp black pepper
2 Tblsp lime juice (divided)
4-5 chicken thighs (possible to triple this portion)
¼ cup chicken broth
1 Tblsp. White vinegar
2 tsp. Cilantro, dried
½ tsp oregano
Preparation
take all dry indredients and garlic- make a rub and rub into chicken. Pan fry chicken till browned and partially cooked. Add lime, broth and vinegar and cook in oven for 45 minutes at 350 degrees.
Freezes well.
