Ingredients
1/8 cup julienne cut sun dried tomatoes in olive oil, room temperature
1/2 cup Quorn “Tenders” (or other chopped meat-free “chicken”)
3/4 cup chopped cauliflower
1 cup torn spinach leaves
1 Tbls Balsamic vinegar
Seasoning: Pepper, salt, rosemary, thyme, oregano
Preparation
- Heat chicken replacement per product instructions, set aside.
- In small bowl combine sun dried tomatoes with a small amount of oil, balsamic vinegar and seasoning to taste.
- Toss spinach, cauliflower and chicken replacement with sun dried tomato mixture.
- Serve immediately.
