Ingredients

1/8 cup julienne cut sun dried tomatoes in olive oil, room temperature

1/2 cup Quorn “Tenders” (or other chopped meat-free “chicken”)

3/4 cup chopped cauliflower

1 cup torn spinach leaves

1 Tbls Balsamic vinegar

Seasoning: Pepper, salt, rosemary, thyme, oregano

Preparation

  1. Heat chicken replacement per product instructions, set aside.
  2. In small bowl combine sun dried tomatoes with a small amount of oil, balsamic vinegar and seasoning to taste.
  3. Toss spinach, cauliflower and chicken replacement with sun dried tomato mixture.
  4. Serve immediately.
