Ingredients

1-1/4 lbs smoked sausage, sliced

2 onions, chopped

10 cloves minced garlic

1 tsp. Oregano

1 tsp. red pepper flakes

1/2 cup dry white wine

8 cups chicken stock

28 oz. Canned tomatoes

2 potatoes, peeled and diced

2 carrots, peeled and diced

15 oz. can kidney beans

1 bunch kale coarsely chopped (8 generous cups)

2 green peppers, diced

3 Tbls. Wine vinegar

Preparation

Cook sausage in large pot over low heat until fat rendered (10 minutes). Increase heat to medium. Add onions and saute 8-10 minutes till translucent. Stir in garlic, oregano, red pepper. Add wine. Boil 2 minutes. Stir in stock, tomatoes, potatoes, carrots, and beans. Bring to boil. Reduce heat and simmer 15 minutes. Add kale, peppers, and vinegar. Simmer 15 minutes. Add salt and pepper to taste.
