Ingredients

1 can tuna

handful of fresh kale leaves

2-3 pieces of pickled vegetables (Brussels Sprouts, Asparagus, Cucumbers, etc)

mayo

seeded mustard

salt and pepper

olive oil

apple cider vinegar (unpasturized will max. nutrition)

Preparation

place tuna in a bowl and stir in tbsp mayo and tbsp mustard, salt and pepper to taste.

chop pickled veggies and add to tuna.

wash handful of kale leaves, place in pot or fry pan with 3 tbsp water and saute for 2 min, stirring, until all kale is bright green and wilted. remove, wash briefly in cool water using strainer, chop, drizzle in olive oil, add to tuna.

stir in tbsp apple cider vinegar for kick.
