Ingredients
1 bunch kale (Lacinato is excellent for this) sliced diced very very thin
1 tomato, diced
1 avocado, chopped
2 1/2 Tbsp extra virgin olive oil
1 1/2 Tbsp lemon juice
1 tsp Celtic sea salt (or Himalayan)
1/4 - 1/2 tsp cayenne pepper (optional)
Preparation
In mixing bowl toss all ingredients except tomatoes together, squeezing or massaging the kale with your hands (yes!) to wilt the kale and cream the avocado. Add tomatoes and serve immediately.
Makes 4 small side salads
