Ingredients

(for 2-4 servings)

1-Bag Tyson’s grilled chicken strips

1-2 slices of onion, sliced thin and chop

1-shallot chopped

1-heaping teaspoon crushed garlic

2-medium carrots chopped

1-slice lemon cut in half

Juice of 1/2 Lemon (use fresh!)

3-Tablespoons (unsalted) Butter

1-small can sliced Mushrooms with liquid

1/4 cup dry Sherry or Vermouth

1/4 cup Baby Spinach leaves

1/4 cup Parmesan Cheese

1/2 teaspoon thyme

1/2 teaspoon rosemary

salt/pepper to taste

1/2 Box Fettuccine (2-4 servings)

Preparation

Melt Butter in a Large skillet, Add the Lemon, Onion and Shallots and saute about 2 mins. over Med. heat. then add the carrots and saute another 2 mins. Add the sherry, mushrooms garlic and chicken strips (chop chicken into smaller chunks in pan).

Meanwhile prepare pasta according to box.

Add the thyme and rosemary, reduce heat to low and cover pan stir occasionally until vegetables are all tender. (add water a tablespoon at a time if mixture becomes too dry). Add baby spinach 2-3 mins before serving. Parmesan cheese on top after serving.
