Ingredients
4 chicken breasts cut in 1 inch thick fajitas
1/2 cup olive oil
1 cup apple vinegar
4 dry ancho chiles cut in strips
2 dry guajillo chiles cut in strips
4 apples cut in 8 pieces each
salt
You can find the dry chiles in any latin market.
Preparation
Pour the olive oil and the apple vinegar in a medium skillet over medium heat. Add both chile ancho and chile guajillo strips and stir.
Add the chicken fajitas and salt them to taste and cover for about 8 minutes.
Remove cover and add the apple pieces. Toss all the ingredients making sure the chicken is well cooked.
Cover for another 4 minutes and remove from heat.
Serve it with white rice or mashed potatoes as a side dish.
