Ingredients
Small can of Mandarin oranges, drained, reserving juice
1/2 cup dried cranberries
Dressing:
1/4 cup orange juice
1/4 cup olive oil
4 tablespoons white wine vinegar
2 tablespoons grated orange peel
6 cups mixed baby greens
1 cup pecans, toasted
Preparation
Microwave to simmer juice from canned mandarin oranges and, if necessary, add enough orange juice to equal 1 cup. Add cranberries to juice and let stand until softened approximately 30 minutes.
Whisk dressing ingredients. Season to taste with salt & pepper.
To salad greens, add mandarin oranges, drained cranberries and pecans.
