Ingredients

Bars:

2 cups all purpose flour

2 teaspoons cinnamon

1/4 teaspoon nutmeg

1 teaspoon baking soda

1/4 teaspoon baking powder

1/2 teaspoon salt

1 cup sugar

1/2 cup brown sugar

3/4 cup vegetable oil

3 eggs

1 teaspoon vanilla extract

1 1/2 cups grated zucchini

1 1/2 cups grated sweet potato (peeled)

1 teaspoon grated lemon zest

1 cup toasted chopped pecans

Orange Sherry Icing:

6 tablespoons butter

3 cups powdered sugar

3 tablespoons fresh orange juice

1 teaspoon fresh lemon juice

1/2 teaspoon orange extract

2 teaspoons grated orange zest

2 tablespoons dry sherry

Preparation

Bar Instructions: Preheat oven to 350 degrees. Grease and flour a 10x15 pan. Combine ingredients thru nutmeg in a bowl, and stir with a wisk to combine. Beat sugar, oil, eggs. vanilla, and lemon zest in a large bowl. Mix in zucchini and sweet potato. Add dry ingredients and nuts to combine. Bake in prepared pan until toothpick comes out clean, about 20-30 minutes. Cool completely.

Icing Instructions: Cream the butter until soft. Add one cup of sugar and orange juice and beat until creamy. Gradually add remaining sugar. Beat in the lemon juice, orange extract, and grated zest. Add the sherry and beat until smooth. Spread over bars.
