Ingredients
3/4 C all-purpose flour
2/3 C cornmeeal
2 Tsp baking powder
1/2 Tsp salt
1/2 C warm milk
2 Tbsp unsalted butter, melted
2 eggs
2 Tbsp vegetable oil
Preparation
In large bowl, whisk tog. flour, cornmeal, baking powder & salt. Whisk in milk, butter & eggs just until smooth. Heat griddle or large cast-iron skillet over medium heat; brush with some of the oil. Pour batter, 2 tbsp at a time, onto griddle. Cook until undersides are golden, about 2 min. Flip & cook until undersides are golden, 1 to 2 min. more. Transfer to plate; keep warm. Repeat with remaining batter.
