Ingredients

2 cups turbinado

1 and 1/2 cup veg. oil

1/4 pound tofu

1 tablespoon vanilla

1 tablespoon cinnamon

1 tablespoon baking soda

3 cups white flour

1 teasoop salt

3 cups grated carrots

1 cup fresh pineapple chopped

1 cup raisins

Preparation

In a food processor blend tofu with oil, turbinado and vanilla till well blended. Sift together flour,soda,salt cinnamon add dry ingredients in a bowl with tofu mixture,carrots,pineapple and raisins fold the mixture together. Spoon the batter into cupcake paper lined muffin tins and bake at 375 for 20 minutes or till pick inserted into the center of muffin comes out clean
