Ingredients
1/2 cup egg whites
1/4 teaspoon salt
1 to 1 1/4 cups sugar
1/2 teaspoon vanilla
2 1/3 cups coconut moist (unsweetened) if sweetened use 1/4 cup less sugar
Preparation
Beat egg whites and salt till soft peaks form, gradually add sugar beating till still peaks form. Fold in vanilla and cocount. Drop from teaspoon 2 inchesd apart on a cookie sheet covered with brown paper. Bake in slow oven 325 degrees for 20 minutes. Cool slightly before removing from pan.
