Ingredients

1/4 c fresh lime juice

1/4 c olive oil

2 tsp sugar

1/2 tsp salt

1/4 tsp hot pepper sauce

4 oranges

1 lg jicama, peeled & julienned (~3c)

2 med cucumbers, peeled & sliced into rounds (~3 c)

1 med red onoin, thinly sliced

1 c coarsly chopped cilantro leaves

1-2 fresh jalapeno chiles (1 red, 1 green), finely chopped

Preparation

  1. Whisk together lime juice, oil, sugar, salt, hot peppersauce in large bowl

  2. Trim peel & pith from oranges. Cut in half lengthwise, then slice into thin half-moons.

  3. Add orange slices & remaining ingredients to dressing. Toss. Season to taste with salt and pepper. Cover and chill one hour or overnight. Serve on a bed of lettuce, garnished with additional orange slices if desired.
