Ingredients

6 medium size cooking apples

4-5 Tbsp sugar (depending on the tartness of the apples)

2 Tsp. Cinammon

3 cups flour

2 cups sugar

1 cup vegetable oil (Canola or Sunflower)

4 large eggs (plus 1 additional if batter is too thick)

2 1/2 Tsp. vanilla

1 Tsp. salt

3 Tsp. baking powder

Preparation

Peel and dice apples into thimble size pieces. Mix 4-5 tbsp. sugar with cinammon and sprinkle over apples. Set aside.

Mix flour, baking powder and salt. Add eggs, sugar, oil and vanilla. Beat until smooth. Pour (or spoon; the batter is thick) half the batter into a greased, floured 8" tube or bundt type pan. Cover with half the apples. Spoon the rest of the batter over the apples and top with remaining apples. Bake at 350 for 1 1/2 hours.
