Ingredients

1 tbsp ground allspice

1 tbsp dried thyme

1 1/2 tsp dried chili flakes

1 1/2 tsp ground pepper

1 1/2 tsp ground sage

3/4 tsp nutmeg

1/2 cup Orange Juice

juice of 1 lime

1 cup chopped onion

3/4 tsp cinnamon

1 tbsp salt

2 tbsp garlic powder

1 tbsp sugar

1/4 cup olive oil

1/4 cup soy sauce

3/4 cup white vinegar

1-4 scotch bonnet peppers (1 for mild, 4 for hot) seeded and chopped

3 green onions, chopped

6 boneless skinless chicken breasts

Preparation

combine dry ingredients, whisk in oil, soy sauce, vinegar, OJ, and Lime juice. stir in hot peppers and onion.

Add chicken, marinade for at least 4 hours or overnight

Preheat BBQ to medium, and grill chicken for about 6 minutes on each side or until cooked through, basting with additional marinade while cooking.

Bring left over marinade to a boil for several minutes and spoon over chicken before serving.
