Ingredients

6 Cloves garlic, minced

2 medium sweet onions chopped

4 large cans (28 oz) crushed tomatoes

8 cups vegetable broth

1 bunch basil, chopped

2 tablespoons olive oil

Salt & Pepper to taste

Preparation

Heat olive oil and sauté onion and garlic until soft. Add everything except the basil and bring to a boil. Lower to a simmer for 30 minutes and then add basil. With a hand blender pulse a few times so soup is still a bit chunky!!! Enjoy!
