Ingredients

1 cup rolled oats
3/4 cup oat bran or quick oats
1/2 cup almond meal (or 1/4 cup each of almond and pecan meals)
1/4 cup plus 2 Tbsp. gluten free flour
1/4 tsp xanthan gum
1/2 tsp baking soda
3/4 cup raw pecans and/or walnuts
1/2 cup bittersweet chocolate chips
optional- 1/2 cup unsweetened coconut
(2)
1/2 cup raw honey
1/4 cup butter
1/4 cup unrefined coconut oil
1 tsp vanilla
Mounded 1/4 tsp sea salt
Preparation
Mix (1) in a large bowl. Soften but be careful not to melt the honey, butter and coconut oil and whisk all #(2) ingredients together. Then combine (1) and (2). Form into balls and bake @ 325* for 9-11 minutes.
If dough is too soft or sticky, place in refrigerator until it holds together nicely.
