Ingredients
3 T olive oil
4 corn tortilla, torn into
spoon sized pieces
5 garlic cloves, minced
1 large oion pureed
3 large, tomatoes, peeled &
pureed
1/4 C canned tomato puree
1/4 C fresh lime juice
1 T chili powder
1 t ground cumin
1 T chipolte chilies in adobo
sauce
1/2 C fresh cilantro leaves
chopped
8 C chicken stock
salt & pepper to taste
Garnish
1 skinless, boneless chicken
breast
1 ripe avacado, peled, chopped
1 C shredded cheddar cheese
crispy tortlla chips, cut into
strips like noodles
Preparation
Puree tomato and onion togeatherin blender or food processor. Heat oil i a large pot. sautetorilla pieces with garlic until tortillas soften. Add the pureed oion and tomato and ring to a boil. Add canned tomato puree. lime juice, chili powder, cumin, chipotle chiles, and chicken stock. Simmer 30 minutes.
Serve with garnish.
