Ingredients

Rhubarb Mixture:

4 Cups 1-in slices rhubarb

1/3 Cup Flour

1 2/3 Cups Sugar

Pinch of Salt

Crust:

1 tsp salt

2 C Flour

3 TBS Sugar

2/3 C Vegtable Oil

3 TBS Milk

Preparation

  1. Combine the rhubarb mixture and let stand at least 15 min.

  2. Blend salt, flour and sugar in pie pan. Stir together oil and milk; quickly add to blour mixture and combine using hands or fork.

  3. Pat half of the crust mixture in the pie pan and up the sides. Fill the crust with the rhubarb mixture.

  4. Crumble the rest of the pie crust on top.

  5. Bake at 400 for 40 min. Cover with tin foil if pie crust begins to burn.
