Ingredients
1.5lb stew beef cubes
1 large red onion, chopped
3 garlic cloves, chopped
2 cans pinto beans
2 cans kidney beans
1 large or 3 small beef stock cubes
1 small can tomatoe paste
1 med can crushed tomatoes
1/8 cup chili powder
3/4 cup dark beer
1 green pepper, chopped
3tbsp Cumin
3tbsp coriander
3tbsp mexican oregano
1tsp (or to taste) cayenne
1tbsp more chili powder
Salt to taste
Preparation
Add beans, stock cube, tomatoe paste, beer and tomatoes to crock pot. Brown beef in skillet until outside is just seared add beef to crock pot, in same skillet brown onion and garlic until fragrant, add this to crock pot also. Slow cook on Hi for 6-8 hours or Low for 12-14 hours. Turn crock pot off and add green pepper and additional spices. Allow to cool before removing from pot and store as desired. This freezes very well.
