Coconut water 180ml

Sugar 60 gm

Agar-agar leaf 20gm

Walnut for garnish 3pc

Mint sprig 1no

Chocolate 50gm

Fresh cream 10ml

Preparation

Method Take a bowl put Agar-agar leaf and pour hot water. Take sauce pan melt sugar, (do not burn it) add fresh coconut water and bring it to luke warm temperature. Add the Agar-agar to the coconut water and set it to cool for at least 3hrs.

To serve Melt the chocolate over double boil, add cream. Pour the chocolate in the center of the plate garnish the plate with little cream Take out the coconut jelly from the fridge using two spoon dipped in hot water make a quenelle and place on top of the chocolate sauce garnish the jelly with walnut and sprig of mint
