Ingredients
2/3 cup unsalted butter or other solid shortening, at room temperature
2 2/3 cups sugar
4 large eggs
2 cups cooked pumpkin
2/3 cup water
3 1/3 cups flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1/2 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon cloves
2/3 cup walnuts, toasted, chopped
1 cup semi-sweetened chocolate chips (or 2/3 cup raisins)
Preparation
Preheat oven to 350F and grease two 9x5x3 inch loaf pans. In large bowl, cream together sugar and butter until fluffy. Stir in eggs, pumpkin and water. Blend in dry ingredients. Stir in nuts and chocolate chips/raisins; pour into prepared pans. Bake about 70 minutes, or until wooden pick inserted in centre comes out clean. Cool. Makes 2 loaves.
