Ingredients
1 pnd med. shrimp
peeled
deveined
cut into thirds. 4 cloves garlic
minced. 3-4 TBSP olive oil. 4 dashes green pepper sauce. Juice of 1 lime. 4TBSP chopped cilantro. 2 tomatoes
chopped. 8 romaine leaves
chopped. 1 can black beans
drained. 1/2 sweet onion
chopped fine. 1/2 cup sharp cheddar
shredded. 3/4 cup ranch dressing. 2-3TBSP (Or to taste) Frank’s red hot original cayenne pepper sauce. 8 flour tortillas
Preparation
In a large bowl, combine cilantro, lettuce, onions, tomatoes and cheese; set aside. Heat oil in a large skillet over med-high heat; add garlic cooking till opaque. Add shrimp and cook till opaque, 3-4 minutes. While cooking shrimp, heat black beans in microwave (covered)on high for 1-2 minutes, set aside. Remove shrimp from heat; add green pepper sauce and lime juice; toss to coat shrimp. Poor both black beans and shrimp over cilantro mixture and toss. Combine ranch and Frank’s hot pepper sauce and poor over entire mixture, tossing to coat all ingredients. Serve in warm tortillas. Add a slice of avocado and cilantro sprig for garnish.
