Ingredients

3/4 cup butter (1 1/2 sticks), softened

1 cup firmly packed brown sugar

1/4 cup honey

2 eggs

1 tablespoon vanilla

1 1/4 cups all-purpose unbleached flour

1 teaspoon baking soda

1 1/2 teaspoons cinnamon

3 cups oats

1 1/2 cups dried cranberries

3/4 cup walnuts, chopped

Preparation

Preheat oven to 350 degrees

Beat together the butter and sugar. Add honey, eggs and vanilla and mix well together. Add combined flour, baking soda, and cinnamon. Stir in oats, cranberries and walnuts.

Drop by spoonfuls on ungreased baking sheet and bake for 10 minutes in preheated oven (cookies should be slightly under-baked).
