Ingredients
¼ cup extra virgin olive oil
8 medium vine ripened tomatoes
1 pkg spaghetti (in my case raviolis)
2 cloves garlic
2 large or 4 small jalepenos
1 cup fresh basil
Parmesean-reggiano
1 lb ground turkey
Sea salt
Fresh ground black pepper
Preparation
Blanch tomatoes (to remove skins) peel & chop tomatoes, medium size chunks are fine Mince garlic Slice jalapeños in half, make sure to remove seeds (you will pay if you don’t) Heat 1/8 cup olive oil in lrg skillet, add garlic, sauté for 3 to 4 minutes until lightly golden Add tomatoes and jalapeños & fresh basil, cook until most liquid is reduced Start your turkey burger & water for pasta In blender or food processor, transfer your sauce mix& remaining olive oil, for chunkier sauce pulse just a few times, for a smoother sauce blend completely Once blended add to your browned turkey burger , salt and pepper to taste Serve over or mix in your pasta Top with parmesan-reggiano
