Ingredients
3 T cooking oil
2 leeks
1/2 inch root ginger
1 clove garlic
3/4 cup short grain rice
3 c water
pinch salt
9 oz green vegetables - spinach or frozen peas good
Preparation
Wash, trim and chop leeks. Peel and crush the garlic
Heat the oil in a wok or wide pan. Add the leeks, ginger, and garlic, and fry gently for five minutes
Add the rice, and stir for a few minutes. Add the water and the salt. Simmer for 10 minutes
Add the greens to the pan. Simmer for 10 minutes or until the rice is tender
