Ingredients
2 cups sugar
2 cups water
2 cups peeled fresh ginger, cut into coin-size slices
ice
club soda
lime wedges
crystallized ginger pieces (optional)
Preparation
In a medium saucepan combine sugar, water, and ginger. Bring to boiling, stirring to dissolve sugar. Reduce heat and simmer, uncovered, for 8 minutes or until the mixture is a thin syrup consistency. Remove from heat and let cool to room temperature, 2 to 3 hours. Strain through a fine-mesh sieve; discard ginger. Refrigerate syrup in an airtight container for up to 1 month.
For ginger ale, fill glass with ice. Add 1/4 cup ginger syrup to glass and top with club soda. Garnish with lime wedges and crystallized ginger, if desired.
