Ingredients
6 tablespoons rice vinegar
6 tablespoons vegetable oil
5 tablespoons peanut butter
3 tablespoons soy sauce
3 tablespoons packed brown sugar
2 tablespoons minced garlic
5 cups thinly sliced green cabbage
2 cups thinly sliced red cabbage
2 red or yellow bell peppers, cut into matchstick-sized strips
8 green onions, cut into matchstick-sized strips
1/2 cup chopped fresh cilantro
Preparation
In a small bowl, whisk rice vinegar, vegetable oil, peanut butter, soy sauce, brown sugar, ginger, and garlic to blend.
In a separate bowl, toss the remaining ingredients. Add dressing and toss to coat. Season with salt and pepper and serve.
