Ingredients
shredded swiss, gruyere, and sharp white cheddar - or any 3 cheeses of your choice!
butter
flour
milk
salt/pepper
brown mustard or russian dressing
(for homemade dressing - mayo, grated onion w/ juice, dill relish, catsup, fresh dill, fresh parsley)
topping:
2 slices rye bread toasted
1 tsp sweet paprika
handful of flatleaf parsley chopped
sauerkraut
4 thick slices corned beef
macaroni noodles
Preparation
boil large pot of water for pasta shred cheeses
in another pan melt 3 Tbs butter and 3 Tbs flour and whisk, add a couple cups of milk, salt/pepper to season, and mustard or dressing melt in 2/3 of the shredded cheese (about 2 cups)
topping: toast buttered rye bread, add paprika and parsley, process to make crumble
rinse kraut, squeeze and fluff
cook pasta to al dente add kraut and sliced/chopped corned beef add cheese sauce place in casserole dish add toasted topping and remaining cheese
