Ingredients

cooked salmon

bowtie pasta

extra-virgin olive oil

chopped marinated artichoke hearts

vegetable broth

chopped parsley

pancetta or bacon, cooked

Preparation

cook pasta approx 7min with salt

in pan combine 2 tsp extra-virgin olive oil, pancetta or bacon cut into bits, strained artichoke hearts

add salmon and 1 cup vegetable broth

add small amt of starchy pasta water to thicken

add sauce to pasta and top with 2 Tbs parsley
