Ingredients

1 t olive oil

1 medium onion, chopped

1 medium bell pepper, chopped

2 14 oz can stewed Italian-style tomatoes, undrained

12 oz package frozen, ready to eat medium shrimp, thawed and drained

8 oz reduced fat, fully cooked turkey sausage, slicied and quartered

1 t dried Italian seasoning

1/4 t hot pepper sauce (optional)

4 c rice, cooked

Preparation

  1. Heat olive oil in a large, nonstick skillet over medium high heat until hot. Add pepper and onion, sauté until tender crisp.

  2. Stir in remaining ingredients except rice. Bring to a boil. Reduce heat, and simmer about 5 minutes (until shrimp turns pink), stirring occasionally.

  3. Stir in rice. Continue cooking until the liquid is absorbed and rice is cooked.
