Ingredients

4 cups of cold water

8 cups of beer

3 carrots, each quartered

4 onions, each quartered

1 garlic clove, cut in half

4 celery stalks with leaves

8 pepper corns

1 tbsp. mustard powder

1/2 cup molasses

6 whole cloves

1 large ham (about 6-8 lbs)

Preparation

With the exception of the ham, put all of the ingredients in a large pot and bring to a boil, cover and let simmer for 30 minutes.

Put the ham in the hot liquid. Cover and let simmer at low heat for 25 minutes per pound.

Once cooked, leave it in the liquid to cool until it can be handled. Cut away all the fat.

Slice and serve cold or warm.
