Ingredients

2 cups cooked ham,* cut in bite-sized pieces

1 tbs butter or margarine

1/2 cup chopped onion

1/2 cup chopped green pepper

1 clove garlic, minced

1 can (1 lb) stewed tomatoes

1 1/2 cups water

1/2 tsp salt

1/2 tsp thyme leaves, crushed

1/4 tsp hot pepper sauce

1 cup uncooked Carolina Extra Long Grain rice

*Or substitute 1 can (12 oz) luncheon meat

Preparation

Saute ham lightly in butter about 5 minutes. Add the onion, green pepper, and garlic; cook 5 minutes, stirring occasionally.

Stir in the tomatoes, water, salth, thyme and hot sauce. Bring to a boil and stir in the rice. Cover, lower hear and simmer about 30 minutes, or until rice is done.
